Water Kefir (Basic Method)

Water kefir grains are translucent, jelly-like crystals made up of bacteria and yeast. They ferment sugar water into a fizzy, probiotic-rich drink in 24-48 hours. You can buy them online or get them from someone who makes water kefir — they multiply and people are happy to share.

Time: 24-48 hours  ·  Yield: About 1 quart

Ingredients

  • 1 quart filtered water
  • 1/4 cup sugar (white, raw cane, or coconut sugar)
  • 2-3 tablespoons water kefir grains

Method

  1. Dissolve the sugar in warm water. Let cool to room temperature.
  2. Add the water kefir grains to the cooled sugar water.
  3. Cover loosely and ferment for 24-48 hours at room temperature.
  4. Strain out the grains (reuse them immediately for the next batch).
  5. The liquid is now water kefir — lightly fizzy, slightly sweet, mildly tangy.
  6. Flavor and bottle for a second ferment (see Water Kefir Soda recipe for flavoring ideas).
Note: Water kefir grains multiply over time. Share extras with friends, freeze them as backup, or blend them into smoothies. If you go on vacation, put the grains in fresh sugar water in the fridge. They'll slow down but survive for 2-3 weeks. Coconut sugar produces a richer, almost caramel-flavored kefir.
