
Vitamin C Citrus Gummies
Tart, bright, and packed with real vitamin C from citrus juice — not ascorbic acid powder. Kids eat these like candy.
Time: 15 minutes active, 1 hour to set · Yield: About 50 small gummies
Ingredients
- ●1 cup fresh orange juice (about 3-4 oranges, freshly squeezed)
- ●3 tablespoons grass-fed gelatin powder
- ●2 tablespoons fresh lemon juice
- ●2 tablespoons raw honey
Method
- Pour 1/2 cup of the orange juice into a saucepan. Sprinkle gelatin evenly over the surface. Let bloom for 5 minutes.
- Warm over low heat, stirring gently, until gelatin dissolves completely.
- Remove from heat. Stir in the remaining orange juice, lemon juice, and honey.
- Pour into silicone molds. Refrigerate for 1 hour.
- Pop from molds and store in an airtight container in the fridge.
- *Variations:**
- **Grapefruit-Ginger:** Use grapefruit juice and add 1/2 teaspoon grated fresh ginger
- **Lemon-Honey:** Use 1/2 cup lemon juice + 1/2 cup water, and increase honey to 3 tablespoons
- **Mixed Citrus:** Use a blend of orange, lemon, lime, and grapefruit juices
Note: Fresh-squeezed juice gives the best flavor and the most vitamin C. Store-bought juice works in a pinch, but choose not-from-concentrate. The gelatin itself provides amino acids (glycine, proline) that are beneficial — so even the "base" of these gummies is functional.
