Probiotic Gummies
A creative way to get probiotics into the daily routine. These use high-quality probiotic capsules opened and stirred into the gummy base. Simple and effective.
Time: 15 minutes active, 1 hour to set · Yield: About 40 small gummies
Ingredients
- ●3/4 cup fruit juice (grape, berry, or apple — something flavorful)
- ●3 tablespoons grass-fed gelatin powder
- ●1 tablespoon raw honey
- ●2 probiotic capsules (high-quality, multi-strain — open and discard the capsule shell)
Method
- Pour half the juice into a saucepan. Sprinkle gelatin over the surface. Bloom for 5 minutes.
- Warm over low heat until gelatin dissolves. Do not exceed 43°C (110°F) — this is crucial, as higher temperatures kill the probiotic cultures.
- Remove from heat. Stir in the remaining juice and honey. Let cool to 38°C (100°F) or below.
- Open the probiotic capsules and stir the powder into the mixture. Blend well.
- Pour into silicone molds. Refrigerate for 1 hour.
- Store in the fridge and consume within 1 week for maximum probiotic viability.
Note: Temperature control is essential with probiotics. Use a thermometer if you're unsure — the gelatin will dissolve at temperatures that won't harm the cultures, but you need to keep it gentle. Choose a probiotic supplement with at least 10 billion CFU and multiple strains (Lactobacillus, Bifidobacterium). These are best consumed within a week. The live cultures degrade over time, even refrigerated.
