
Herbal Iced Tea
A refreshing, caffeine-free summer drink that showcases whatever herbs you have growing.
Time: 10 minutes + cooling · Yield: About 1.9 L (8 cups)
Ingredients
- ●1.9 L (8 cups) water
- ●20 g (1 large handful) fresh herbs: mint, lemon balm, chamomile, lavender, or a mix
- ●2-3 Tbsp honey or sugar (adjust to taste)
- ●Juice of 1 lemon
- ●Ice
Method
- Bring the water to a boil. Remove from heat.
- Add the fresh herbs. Cover and steep for 10-15 minutes (longer for stronger flavor — taste as you go).
- Strain out the herbs. Stir in honey while the tea is still warm (it dissolves better). Add lemon juice.
- Let cool to room temperature, then refrigerate until cold.
- Serve over ice. Garnish with fresh herb sprigs and lemon slices.
- *Favorite combinations:**
- **Mint-lemon:** Fresh mint + lemon juice + honey
- **Chamomile-lavender:** Chamomile flowers + a few lavender buds + honey
- **Lemon balm-ginger:** Lemon balm + sliced fresh ginger + honey
- *Storage:** Refrigerator for 3-4 days.
