Herbal Electrolyte Ice Pops

Hydrating, mineral-rich, and perfect for kids (or adults who appreciate a frozen treat that's actually good for them). These replace the neon-colored popsicles with real fruit and real electrolytes.

Time: 10 minutes active, 4-6 hours freezing  ·  Yield: 6-8 popsicles

Ingredients

  • 2 cups coconut water
  • 1 cup fresh fruit (strawberries, blueberries, mango, watermelon, or a mix)
  • Juice of 1 lime
  • 1 tablespoon raw honey
  • 1/8 teaspoon fine sea salt
  • 2 tablespoons brewed and cooled herbal tea (peppermint or hibiscus work well — for color and flavor)
  • Optional: pinch of magnesium powder

Method

  1. Blend the coconut water, fruit, lime juice, honey, salt, tea, and magnesium (if using) in a blender until smooth.
  2. Pour into popsicle molds. Insert sticks.
  3. Freeze for 4-6 hours until solid.
  4. To unmold, run the outside of the mold briefly under warm water.
  5. *Variations:**
  6. **Strawberry-Mint:** Strawberries + peppermint tea
  7. **Mango-Lime:** Mango + extra lime juice
  8. **Watermelon:** Watermelon chunks + a pinch of salt (no need for additional sweetener)
  9. **Berry-Hibiscus:** Mixed berries + hibiscus tea (gorgeous deep red color)
Note: These are a perfect way to hydrate kids during summer or after sports without the sugar load of commercial popsicles. The coconut water provides potassium. The salt provides sodium. The fruit provides natural sweetness and vitamin C.
