Ingredients

  • 6 cinnamon sticks (Ceylon/true cinnamon preferred — milder and more complex than cassia)
  • 120 ml (½ cup) 80-proof vodka

Method

  1. Break the cinnamon sticks into smaller pieces. Place in a clean glass jar.
  2. Pour the vodka over the cinnamon and seal.
  3. Store in a cool, dark place. Shake weekly.
  4. Strain and bottle after 6-8 weeks.
  5. *Storage:** Room temperature for up to 2 years.
