Ingredients
- ●60 g (½ cup) raw almonds, coarsely chopped (or 30 g raw apricot kernels for a more intense flavor)
- ●120 ml (½ cup) 80-proof vodka
Method
- Coarsely chop the almonds. Toasting them lightly in a dry pan for 3-4 minutes intensifies the flavor but is optional.
- Place in a clean glass jar. Pour the vodka over the almonds and seal.
- Store in a cool, dark place. Shake weekly.
- Strain and bottle after 6-8 weeks.
- *Storage:** Room temperature for up to 2 years.
- *Note:** True almond extract flavor comes from benzaldehyde, which is more concentrated in apricot kernels and bitter almonds. Regular sweet almonds will give a milder, nuttier flavor.
